Ingredients
- 1 cup pumpkin
- ½ cup peanut butter
- 2 eggs
- ¼ cup vegetable oil
- 2½ cups whole wheat flour
- 1 teaspoon baking soda
Instructions
Preheat oven to 350 degrees.
In a large bowl, combine pumpkin, peanut butter, eggs and oil.
Mix in whole wheat flour and baking soda, stirring until a stiff cookie dough forms.
Pinch off a teaspoonful of dough. Roll it between your palms into a ball. Fatten between your palms to a disk about a quarter-inch thick. Place on a cookie sheet. Repeat until all the dough has been shaped into disks and placed on cookie sheets, spaced about a half-inch between disks.
Bake for 15 minutes at 350 degrees.
Remove from oven. Allow the cookies to cool on the baking sheets.
Transfer into container or storage bag with a tight seal.
Makes about three dozen cookies.
