Elderflower cordial: Recipe

A refreshing summertime drink from the flowers of the elder shrub.

Elderflower heads.

Ingredients

  • 2.5 pounds sugar
  • 6,5 cups water
  • 4 medium lemons
  • 2 ounces citric acid powder
  • 36 large elderflower heads

Directions

  1. Gather the elderflower heads. Shake each one to remove insects, debris, etc. Wash in cold water. Drain in collander.
  2. Bring water to a rolling boil.
  3. Stir sugar into water. Stir until dissolved.
  4. Remove water-sugar mix from heat. Allow to cool.
  5. Grate rind from lemons. Add grated rind to water-sugar mix. Stir thoroughly.
  6. Slice lemons. Add to mix. Stir thoroughly.
  7. Add citric acid to mix. Stir thoroughly.
  8. Add elderflower heads to mix. Stir thoroughly.
  9. Place plate or pie pan atop the elderflower heads to hold them down into the water mix.
  10. Place towel or cloth over top of pot holding the mix.
  11. Allow to steep for 48 hours.
  12. Strain through fine muslin cloth into large sterilized glass bottles or sterilized plastic bottles.
  13. Seal the bottles. Store glass bottles in cool, dark place. Freeze the plastic bottles.

Use like lemonade over ice. Dilute with water to taste

Also can be used as a flavoring.
